Devil's Food Cupcakes with Banana Cream Cheese Frosting
Devil's Food, a sweet that tempts many and few can resist, such as the layers of chocolate in these sinfully deliciously cupcakes. Click here for Banana Cream Cheese Frosting recipe.
Ingredients
  • 6 ounces semi-sweet chocolate, finely chopped

  • 1 1/2 cups boiling water

  • 1 1/2 cups unsalted butter, softened

  • 1 1/2 cups golden brown sugar

  • 4 large eggs

  • 1 teaspoons vanilla extract

  • 1 1/2 cups unsweetened cocoa powder

  • 2 cups cake flour

  • 2 teaspoons baking soda

  • pinch of salt

  • Banana Cream Cheese Frosting

Steps
  • Heat oven to 350°F. Line muffin cups (2-1/2 inches in diameter) with paper bake cups.

  • Put chocolate in a heatproof bowl and pour boiling water over it. Stir until chocolate has melted and mixture is smooth; set aside.

  • Cream together butter and sugar until blended. Add eggs one at a time and beat to incorporate. Beat in vanilla extract.

  • Stir together cocoa powder, flour, baking soda and salt. Add dry ingredients into mixture and beat until combined. Pour in melted chocolate and beat until blended.

  • Fill prepared cups 2/3 full with batter. Bake 20 to 25 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely.

  • Ice cupcakes with Banana Cream Cheese Frosting and serve with graduation decoration on top or chocolate shavings.

    Makes about 30 cupcakes

Banana in this classic cream cheese frosting recipe lightens up the batch and tastes great on chocolate cake or cupcakes.

Ingredients
  • 8 ounces cream cheese, room temperature

  • 1/2 Cup unsalted butter, room temperature

  • 1/2 Cup mashed ripe banana

  • 1 lb. powdered sugar

Steps
  • Cream together cream cheese and butter until smooth. Add banana and mix to incorporate. Add sugar in 1/2 cup increments beating after each addition until fluffy.

    Makes about 4 cups
