Ingredients
- 2 boxes hot roll mix
- Assorted cheeses, sliced
- Assorted luncheon or deli meats, sliced
- Tomatoes, round slices
- Lettuce for sandwich and garnish
- Black olives, sliced
- Condiments of your choice
Steps
- Spray inside of grad cap pan with vegetable pan spray.
- Prepare hot roll mix according to package directions. Place mix in pan and bake at 350°F for 30 to 35 minutes. Let cool; unmold.
- Slice loaf horizontally in half and add sandwich fillings.
- To make tassel, slice cheese into thin strips, leaving 1/4 in. at top uncut. Roll into tassel.
- Cut another thin strip of cheese for cord. Attach black olive button with toothpick.
- Arrange a bed of lettuce leaves on a large platter and place the sandwich on the platter for a nice presentation. Cut the sandwich into smaller pieces to serve guests.
- Wilton suggests that this sandwich serves 1, however the pan is approximately 14 3/4 x 11 3/4 x 2 inches deep, which should serve 4 to 6 guests when you factor in the additional food on a buffet. Makes about 4 to 6 servings

Every student is a star on graduation day! Prepare a zesty pasta salad studded with festive red, green, and yellow pepper stars.
Ingredients
- 2 green bell peppers
- 2 red bell peppers
- 2 yellow bell peppers
- 1 lb. bowtie pasta
- 1/4 Cup olive oil
- 2 tablespoons fresh lemon juice
- 1 Tablespoon white wine vinegar
- 3 tablespoons finely chopped Italian parsley leaves
- 1/2 Teaspoon salt

- Cut peppers in half lengthwise. Remove stems, seeds, and white membranes. Use a mini star-shaped canapé cutter to cut out stars from peppers. Set aside.
- Bring a large pot of water, 1 teaspoon salt, and 1 tablespoon olive oil to boil over medium-high heat. Add pasta and cook 8 to 10 minutes until pasta is tender. Drain in a colander and cool. Transfer to a large bowl and add pepper stars.
- Whisk together olive oil, lemon juice, vinegar, parsley, salt and pepper. Pour over pasta and toss until thoroughly combined.
- Pasta can be made the morning of the party if covered and refrigerated. Bring to room temperature before serving. Makes 4 to 6 servings.

Layered dips are always a big hit at parties. This Italian version is ideal for a graduation party when served up in a mortarboard dish.
Ingredients
- 1 clove garlic, minced
- 2 (15 oz.) cans Northern white beans, drained, rinsed
- 1 Tablespoon lemon juice
- 1/2 Teaspoon salt
- 1/2 olive oil
- 1 Cup black olives, sliced
- 1 Cup diced tomatoes
Steps
- Place garlic in a food processor and process until minced. Add beans, lemon juice, and salt and process into a puree. With the processor running, slowly add olive oil in a steady stream through the feed tube. Process until mixture is light and fluffy, about 1 - 2 minutes.
- Spoon mixture into serving dish and add a layer of diced tomatoes on top. Finish it off with a layer of minced olives.
- This dip can be made the morning of the party if covered and refrigerated. Bring to room temperature before serving with crackers or tortilla chips. Makes about 2 cups.

Ingredients
- 1 Cup unsalted butter, room temperature
- 2/3 Cup granulated sugar
- 2 hard-cooked egg yolks, mashed
- 1 egg yolk, slightly beaten
- 1 Teaspoon vanilla extract
- 2 cups all-purpose flour
- 2 tablespoons unsweetened cocoa powder
- Chocolate frosting, canned
- Jar of Chocolate sprinkles
Steps
- Preheat oven to 350F (175C). Lightly spray a baking sheet with a non-stick cooking spray. Add butter and sugar into a mixing bowl and beat until smooth. Mix in cooked and raw egg yolks. Sift together flour and cocoa powder and gently fold into mixture.
- Roll out dough on a heavily floured surface to 1/4-inch thickness. Cut out cookies with 2-inch cookie cutters and place 2 inches apart on prepared baking sheet. Bake for 10 to 12 minutes until browned around the outer edges. Remove from oven and cool on pan for 10 minutes then transfer to a wire rack.
- Ice cooled cookies with chocolate frosting and decorate with chocolate sprinkles.Makes about 32 cookies.
