Make your own strawberry chutney to complement chocolate-covered Brie cheese.
Ingredients
- 4 cups diced fresh strawberries
- 1/4 Cup diced red onion
- 1 Teaspoon finely chopped rosemary
- 3 tablespoons brown sugar
- 2 tablespoons white wine vinegar
- 1/2 Cup golden raisins
- 1/8 Teaspoon salt
- 1 (1 lb. ) wheel Brie
- 1/2 Cup pink melting chocolates
- Crackers or sliced baguette
Steps
- Place diced strawberries, onion, chopped rosemary, sugar, vinegar, raisins, and salt in a medium saucepan and stir to combine. Cook, covered, over low heat for 10-15 minutes until ingredients are tender. Cool to room temperature before serving.
- Remove the white rind on the Brie and place on your serving platter. Melt pink melting chocolate in the microwave, in 10-second increments, to a creamy consistency. Immediately spread a thin layer of pink chocolate on top and sides of Brie. Top Brie with strawberry chutney.
- Serve with crackers or sliced baguette.

Marinate shrimp in asian citrus flavors and wrap with snow peas and cabbage for a sweet and tangy crunch.

Ingredients
- 1/3 Cup Grand Marnier
- 1/4 Cup fresh lime juice
- 3/4 Cup olive oil
- 3 tablespoons soy sauce
- 1 Tablespoon fresh ginger, finely minced
- 1/4 Cup sesame oil
- 1 Teaspoon salt
- 1/2 Teaspoon pepper
- 50 medium cooked shrimp, peeled, cleaned, deveined
- 50 large snow peas
- 3 cups water
- 1 Teaspoon salt
- 1 large head red cabbage
Steps
- Whisk together the Grand Marnier, lime juice, olive oil, soy sauce, ginger, sesame oil, salt and pepper in a large bowl. Immerse cooked shrimp in marinade and refrigerate, covered for 1 hour.
- Cover snow peas in water and 1 teaspoon salt in a large pot. Bring to a boil over medium-high heat and blanche peas for 5 minutes. Drain and then plunge into a bowl of ice water. This will stop the cooking process and intensify the color. Drain and refrigerate covered until ready to use.
- Cut off the bottom 1/3 of cabbage head. Set remaining intact cabbage head aside. Cut bottom 1/3 into 1/8 inch thick slices. Pull apart slices and make a bed of cabbage shreds on serving platter. Place intact cabbage head in the center of bed surround by shredded cabbage.
- One hour before serving assemble the dish. Imagine that the shrimp is the letter "C";. Form a snow pea flat along the outer curve of the shrimp, also taking the form of the letter "C". Stick a toothpick through the bottom of the "C"; spearing the snow pea and shrimp, and then up through the top of the "C";, again spearing and securing the snow pea to the shrimp. The "C"; should now resemble the cent symbol.
- Insert the shrimp pick into the cabbage head. Repeat the process, arranging the shrimp and snow peas in the cabbage head. Spear extra shrimp and snow peas with picks and refrigerate covered. Replenish cabbage head with extra shrimp as necessary throughout party.

Toasted cashews and poppy seeds give this chicken salad a nice addition to its well seasoned taste.

Ingredients
- 3/4 Cup chopped cashews
- 1 Tablespoon olive oil
- 3 boneless, skinless half chicken breasts
- 1/2 Cup mayonnaise
- 1 Teaspoon white wine vinegar
- 1/2 Cup minced red onion
- 1/2 Tablespoon poppy seeds
- 1/4 Teaspoon salt
- 1/2 Teaspoon pepper
- Pink cocktail bread (special order from a bakery)
Steps
- Preheat oven to 450F. Scatter cashews on baking sheet and cook until toasted, about 5 minutes. Cool completely.
- Heat oil in a large skillet over medium-high heat. Add chicken breasts and cook for 6 - 8 minutes on one side. Flip chicken and cook for 6 - 8 minutes on other side until chicken center is no longer pink. Remove from heat and cool slightly. Chop chicken into fine bits and place in medium bowl.
- Stir mayonnaise into chicken until combined. Add chopped cashews, vinegar, liqueur, red onion, poppy seeds, salt and pepper and mix well. Chill, covered, until ready to serve.
- Top a slice of pink cocktail bread with chicken salad, making an open face sandwich and serve cold.

A pink white chocolate cheesecake is perfect for a girls-only gathering.
Ingredients
- 1 Cup unsalted butter
- 2 cups vanilla wafer cookie crumbs
- 1 Tablespoon lemon zest
- 2 tablespoons sugar
- 10 oz. good quality white chocolate, chopped
- 3 (8 oz. ) packages cream cheese
- 3 eggs
- 1/4 Cup Grand Marnier
- red food coloring
- sweetened whipped cream
- pink sugar
Steps
- Melt 1/2 cup butter in a small saucepan over low heat or in microwave. Allow remaining 1/2 cup butter to soften at room temperature. Mix together cookie crumbs, lemon zest, sugar, and 1/2 cup melted butter. Pat mixture in bottom and up sides of buttered 10-inch spring-form pan. Freeze covered 30 minutes.
- Preheat oven 350F (175C). Set spring-form pan containing crust on a baking sheet.
- Melt chocolate in top of a double boiler or in a small saucepan over a larger pot of simmering water. Remove from heat and cool 5 minutes. Beat chocolate and cream cheese in a large bowl until smooth. Add eggs, one at a time, beating until incorporated. Beat 1/2 cup softened butter and Grand Marnier into mixture until thoroughly blended. Mix in a red food coloring, a couple of drops at a time, until batter is light pink. Pour batter into prepared pan over crust.
- Place baking sheet with pan in middle rack of oven. Bake 1 hour until cheesecake puffs up and knife inserted off-center comes out clean.
- Cheesecake center will continue to cook and become firm once removed from oven and cake will sink slightly as it cools. Place baking sheet with pan on wire rack. Cool to room temperature.
- Place cheesecake on a large dish and chill uncovered for 2 hours. Remove cheesecake from pan by run a knife around edge of cake to loosen from pan. Release pan latch and remove pan collar.
- Top cheesecake with dollops of whipped cream that are lightly sprinkled with pink sugar. Serve whole or cut into individual wedges.

These pretty in pink martinis are sweet and tart.
