An ideal way to bring down the cost of your party is to bake the birthday cake rather than purchase one. With as little as $20 you can wow guests with a DIY rainbow birthday cake. Read on for our simple instructions.

- 1 box of Classic White cake mix (plus additional cake ingredients listed on back of box)
- food coloring (we recommend purchasing both the primary colors as well as neon)
- Fluffy White icing
- colored sugars (I used pink, yellow and blue on my cake)
- “My Little Pony” figurines to be used as cake toppers
- Round Cake Pan (I used a 9 x 2 3/4 in Excelle Elite Non-Stick Springform Pan. This made it super easy to remove the cake.)
Steps
- Follow the directions on the classic white cake box to make the batter. We recommend leaving the egg yolks out as it will allow you to mix your colors more easily later on.
- Then, divide the batter amongst six small bowls. If you're using fewer colors, adjust the number of bowls accordingly.
- First add red food coloring to one bowl and mix in until you have your desired shade. Do the same for each of the other colors of the rainbow (orange, yellow, green, blue, purple) in their own separate bowls. Follow the directions on the food coloring box to make orange and purple using the primary colors.
- Once your colors have been mixed, begin layering your batters. To mimic a rainbow design, layer your colors backwards. Begin with the purple on the bottom and work your way up to red. A helpful hint: use a large spoon to layer your colors and make sure you dispense each as evenly as possible around the pan. Simply dumping the colors into the middle, one on top of the other, will create an uneven cake.
- Bake according to box instructions.
- Once the cake has cooled, cover with fluffy white icing. Then, place “My Little Pony” figurines on top, and decorate by sprinkling top and sides with colored sugars.
