Ingredients
- 1 jar Pace ® Picante sauce
- 6 ripe medium-sized Haas avocados
- salt and fresh ground pepper to taste

- Mix together 6 avocados and 1/2 jar of Pace® Picante in a bowl and serve.
- If you want a bit more punch to your guacamole, use the whole jar of salsa. Season to taste with salt and fresh cracked black pepper.
- It’s best to prepare the guacamole the day of the party, but if you make it the day before, store it in the fridge with a plastic wrap pressed down onto the top of the guacamole to keep the avocados from turning brown.

Ingredients
- 1 bottle of your favorite buttermilk Ranch dressing
- 4 Oz of crumbled Blue Cheese (Manny likes to use a French Roquefort but you can substitute Stilton or Gorgonzola).
- A splash of hot sauce (Manny’s pick is Tabasco)
- Fresh cracked black pepper

- Mix all the ingredients together in a bowl, and serve with your favorite veggies.
- You can prepare this dip the day before and store in the fridge until you are ready to serve.

Ingredients
- 2 Cup(s) dry pinto beans
- 14 Oz cake of frozen firm tofu thawed
- 2 Tbsp soy sauce
- 1 Tbsp tomato paste
- 1 Tbsp peanut butter
- 1 Tsp onion powder
- 1 clove garlic, crushed
- 1/4 Cup water
- 4 Tsp oil
- 1 large bell pepper, diced
- 1 large onion, chopped
- 2 cloves garlic, crushed
- 2 Cup(s) tomatoes, chopped (fresh or canned)
- 2 Cup(s) tomato sauce
- 1 Tsp salt
- 1/4 Tsp chili powder
- 3 Tbsp ground cumin
Steps
- Check beans carefully for rocks, wash & cover with plenty of cold water in a large pot. Cook beans until tender (about 90 minutes).
- Squeeze the water out of tofu and cut in small cubes (bite-size cubes work best).
- In a mixing bowl, combine soy sauce, tomato paste, peanut butter, onion powder, garlic, water & oil.
- Add the tofu to this mix and stir until tofu is evenly coated. Fry tofu in 2 Tbsp of oil, until all of the liquid is absorbed and the tofu is browned.
- In a large fry pan sauté the bell peppers, onion & garlic in 1 Tbsp of oil till onions are translucent. Add this, along with tofu to the cooked beans and the remaining ingredients. Stir and cook over low heat until warm.

You'll score a knockout blow with this classic dessert! Pineapple Upside Down Cake is both festive and a snap to make. Serve with a dollop of fresh whipped cream to really get the crowd cheering.

- 1 Cup of firmly packed dark brown sugar
- 1/2 Cup unsalted butter
- 1 can (20 oz.) of pineapple slices
- 1 1/2 Cup(s) all purpose flour
- 6 Tbsp cake flour
- 6 Tbsp of ground almonds (from about 2 oz of whole almonds)
- 3/4 Tsp baking powder
- 1/2 Tsp salt
- 1 3/4 Cup(s) sugar
- 1 Cup (2 sticks) unsalted butter at room temperature
- 4 large eggs
- 3/4 Tsp vanilla extract
- 3/4 Cup sour cream
Steps
- Start by making the caramel topping. Take brown sugar and butter and combine and melt in a saucepan on medium heat until sugar dissolves and the mixture is bubbly, this should take several minutes. Pour mixture into a 10 inch diameter stick-free cake pan with 2 inch high sides. Arrange pineapple slices in a single layer on top of the caramel mixture.
- Preheat oven to 325 degrees F. Whisk the flours, almonds, baking powder, and salt in a large mixing bowl. In a separate bowl, use an electric mixer to beat the sugar and butter together until light. Add eggs one at a time, beating after each addition. Beat in the vanilla. Add dry ingredients alternately with sour cream in 2 additions each, beating well after each addition. Pour cake batter over caramel and pineapple in pan.
- Bake cake until tester inserted into the center comes out clean, about 1 hour to 1 hour 15 minutes. Cool cake in pan on a rack for 10 minutes. Turn cake out onto a platter. Serve warm or at room temperature.

- 1/2 Cup tomato juice
- 2 Teaspoon fresh lemon juice
- Worcestershire sauce to taste
- 1 celery stick for garnish
- 1 lemon wedge for garnish
Steps
- Combine the vodka, the tomato juice, the lemon juice, the Worcestershire sauce, the Tabasco, 1 cup ice cubes, and salt and pepper to taste, shake the mixture well, and strain it into a tall glass filled with ice cubes.
- Garnish the Bloody Mary with the celery stick and the lemon wedge.
