Slam Dunk Buffalo Wings
Recreate a sports bar-type atmosphere with these delicious buffalo chicken wings that are sure to win over any b-ball fan!

Ingredients
  • 2 Whole packages of Cream Cheese (8 oz), softened

  • 1/4 Cup Butter

  • 1 Oz Ranch Dressing

  • 1/4 Cup Hot Sauce

  • 2 Cup Shredded Cheddar Cheese

  • 1 Pinch Ground Black Pepper

  • 1/3 Cup Beer

  • 1 Pinch Garlic Powder

  • 1/2 Cup All-Purpose Flour

  • 1/4 Tsp Paprika

  • 1/4 Tsp Cayenne Pepper

  • 1/4 Tsp Salt

  • 10 Pieces Chicken Wings

Steps
  • In a medium bowl, combine cream cheese and dressing mix. Stir in Cheddar cheese, and then beer. The mixture will appear mushy. Cover bowl, and refrigerate for at least 3 hours, overnight if possible. Serve with pretzel sticks.

  • Heat oil in a deep fryer to 375 degrees F (190 degrees C). The oil should be just enough to cover wings entirely, an inch or so deep. Combine the butter, hot sauce, pepper and garlic powder in a small saucepan over low heat. Stir together and heat until butter is melted and mixture is well blended. Remove from heat and reserve for serving.

  • In a small bowl mix together the flour, paprika, cayenne pepper and salt. Place chicken wings in a large nonporous glass dish or bowl and sprinkle flour mixture over them until they are evenly coated. Cover dish or bowl and refrigerate for 60 to 90 minutes.

  • Fry coated wings in hot oil for 10 to 15 minutes, or until parts of wings begin to turn brown. Remove from heat, place wings in serving bowl, add hot sauce mixture and stir together. Serve.

  • Chill the frosting until ready to ice the cupcakes or cake.

  • 1 1/2 Cup(s) Self-Rising Flour

  • 1 1/4 Cup(s) All-Purpose Flour

  • 1 Cup (2 sticks) Unsalted Butter, Softened

  • 4 Whole Large Eggs (Room Temperature)

  • 1 Cup Milk

  • 1 Teaspoon Vanilla Extract

Steps
  • Preheat oven to 350 degrees F.

  • Line 2 (1/2 cup-12 capacity) muffin tins with cupcake papers.

  • In a small bowl, combine the flours. Set aside.

  • In a large bowl, on the medium speed of an electric mixer, cream the butter until smooth. Add the sugar gradually and beat until fluffy, about 3 minutes.

  • Add the eggs, 1 at a time, beating well after each addition. Add the dry ingredients in 3 parts, alternating with the milk and vanilla. With each addition, beat until the ingredients are incorporated but do not over beat.

  • Using a rubber spatula, scrape down the batter in the bowl to make sure the ingredients are well blended. Carefully spoon the batter into the cupcake liners, filling them about 3/4 full.

  • Bake for 20 to 25 minutes, or until a cake tester inserted into the center of the cupcake comes out clean.

  • Cool the cupcakes in tins for 15 minutes. Remove from the tins and cool completely on a wire rack before icing.

  • When ready, transfer some of the frosting to a medium-size bowl and beat in a few teaspoons of water, if necessary, until it reaches a spreadable consistency.
