Fun and Easy Father's Day Recipes: Dinner and Dessert

Keep wowing Dad on Father's Day with some simple yet impressive recipes the kids can help create. In our guide to breakfast and lunch, we made delicious Blueberry Pancakes with a fresh berry compote, and Double Chedder Cheese Burgers -- now it's onto a delectable Garlic Prime Rib and Raspberry Chocolate No-Bake Cake for dinner and dessert.

Garlic Prime Rib

Ingredients
  • 1 (10 pound ) prime rib roast

  • 10 cloves garlic, minced

  • 2 tablespoons olive oil

  • 2 teaspoons salt

  • 2 teaspoons ground black pepper

  • 2 teaspoons dried thyme

Steps
  • Place the roast in a roasting pan with the fatty side up. In a small bowl, mix together the garlic, olive oil, salt, pepper and thyme. Spread the mixture over the fatty layer of the roast, and let the roast sit out until it is at room temperature, no longer than 1 hour.

  • Preheat the oven to 500 degrees F (260 degrees C).

  • Bake the roast for 20 minutes in the preheated oven, then reduce the temperature to 325 degrees F (165 degrees C), and continue roasting for an additional 60 to 75 minutes. The internal temperature of the roast should be at 145 degrees F (53 degrees C) for medium rare.

  • Allow the roast to rest for 10 or 15 minutes before carving so the meat can retain its juices.

Rosemary Mashed Potatoes and Yams

Ingredients
  • 7 cloves garlic

  • 1 1/2 pounds baking potatoes, peeled and cubed

  • 1 1/2 pounds yams, peeled and cubed

  • 1/2 cup milk

  • 1/4 cup butter

  • 1/2 teaspoon dried rosemary

  • 1/2 cup grated Parmesan cheese

  • salt and pepper to taste

Steps
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8-inch square baking dish.

  • Place garlic in small ovenproof bowl, and drizzle with olive oil. Roast for 30 minutes, or until very soft. Cool and peel the garlic, and reserve the oil.

  • Boil potatoes and yams in a large pot of salted water until tender, about 20 minutes. Drain, reserving 1 cup liquid.

  • Place potatoes and yams in a large bowl with milk, butter, rosemary, garlic, and reserved olive oil. Mash to desired consistency, adding reserved cooking liquid as needed. Mix in 1/4 cup cheese. Season with salt and pepper to taste. Transfer to the prepared baking dish. Sprinkle with remaining cheese.

Chocolate Raspberry No-Bake Cake

Ingredients
  • 2 large boxes of Chocolate Graham Crackers

  • Two large tubs of Cool Whip

  • One medium sized jar of raspberry preserves

  • Three containers of fresh raspberries

  • One pint of 2% milk

  • 3 ounces of Kahlua

Steps
  • Lay out a large rectangular tray to build the cake on.

  • Wash the raspberries, place 3/4 of them in a bowl and use a fork to mash them. Put the remaining 1/4 aside, leaving them whole.

  • Mix one tub of cool whip with the jar of raspberry preserves and mashed raspberries. This is your cake filling.

  • Mix together the pint of milk with the Kahlua and place mixture in a low-sided pan that will be easy to dip into.

  • Dip a whole graham cracker into the milk and Kahlua mixture and place on the cake tray. Place four dipped graham crackers together to create the length and width of the cake.

  • Repeat to create another graham cracker cake layer. Each “cake” layer will be two graham crackers high (totaling 8 graham crackers per layer).

  • Using a spatula, spread on a layer of the Cool Whip and raspberry filling.

  • Repeat by creating another graham cracker layer, followed by a layer of filling until your graham crackers are used up.

  • Use a large serrated knife to trim each side of the cake so the layer is smooth and ready to be frosted.

  • Frost the cake with the remaining tub of Cool Whip.

  • Use the remaining raspberries to decorate the top of the cake. Either create a border or spell out “Dad”!
