- 2 cups dry white wine
- 20 oz. Swiss or Gruyere cheese
- 1/4 cup flour
- Green food coloring
- Bring two cups of wine to a boil over low heat.
- Shred cheese and toss with 1/4 cup of flour in a large bowl.
- When cheese is coated in flour, begin adding cheese by the handful into the boiling wine while stirring constantly. Allow each batch to melt completely before adding more cheese. When all cheese is added, stir continuously over low heat for five minutes until cheese becomes creamy. Remove from heat and stir in green food coloring tinting the mixture to your desired color.
- Open a fresh can of fuel and place in under your fondue pot. Carefully light the fuel and place the lid of the can back on top so that it's partially covering the opening; this will help keep the flame low as the fuel burns. Pour the cheese mixture into your fondue pot and set it on the base over the flame.
- Safety Note: Always use fresh canned fuel for your fondue, as old fuel can be dangerous.
