Breakfast:

Nothing makes for an easier or more delicious breakfast than a frittata. There are so many different ingredients and variations to choose from; you can tailor one perfectly to your mom's tastes. And, many of the ingredients are probably already sitting in your fridge.

The basics: eggs, olive oil, salt, pepper, veggies and protein. Choose from turkey, chicken, sausage, bacon or tofu and don't forget your mom's favorite cheese.

For a delicious vegetarian version of the frittata, make Mom a scrumptious Spinach and Potato Frittata.

If you're looking for a version with meat, try the Easy Herb Frittata with ham. Both of these recipes from Allrecipes.com have received rave reviews!

Once your frittata is prepared, round out the meal with fruit salad. Include bananas, apples, peaches and pears with a little squeeze of fresh lemon juice on top to keep the fresh fruit from browning.

And allow mom to relax with a Strawberry Bellini so she feels like a queen.

Lunch

Sandwiches are so passé. Wow your Mom with an eye-catching and palate-pleasing chopped salad. Our recommendation is the BBQ Pork Salad with Summer Fruits & Honey Balsamic Vinaigrette. If you prefer, you can substitute the pork with BBQ chicken breast or omit the grapefruit.

Then, whip up a Brazilian Lemonade. The deceivingly-named drink is actually a limeade, which plays well off the flavor of the BBQ chicken or pork in the salad.

Dinner

Are you ready to go all out by preparing the biggest meal of the day for Mom? Making a nice dinner requires more prep time, patience and perseverance, but it's all worth it if you really want to impress Mom.

First, choose a recipe that will be easy to make yet make a big impact. We suggest making a Broiled Halibut with Goat Cheese Crust or Ginger Soy Sea Bass (see recipe below).

Both of these dishes pair well with Mashed Potatoes. If you go with the Ginger Soy Sea Bass you can add a little wasabi to the mashed potatoes for a spicy Asian flair.

Fresh Strawberry Bellini

Ingredients:

  • 1 bottle prosecco
  • 2 cups pureed and strained fresh strawberries
  • Equipment: Blender, strainer, iced champagne flutes, pitcher and tall "swizzle stirrer" (for the pitcher)

Preparation:

  • Place 8 Champagne flutes in the freezer for 20 minutes.
  • Open the prosecco and let it stand in an ice bucket for 5 minutes.
  • Puree the strawberries and pour into the pitcher.
  • Gently pour in the bottle of prosecco and stir gently to combine.
  • Divide among Champagne flutes and serve.

Soy Ginger Sea Bass (makes 2 servings)

Ingredients:

  • 3 tablespoons finely chopped ginger root
  • 4 cloves chopped garlic
  • Soy Sauce
  • 4 cups spinach leaves or baby mixed greens
  • 2 sea bass filets
  • Pepper

Preparation:

  • Preheat oven to 400 degrees F
  • Lay out two foot-long pieces of aluminum foil on a baking dish or sheet
  • Place two cups of spinach leaves in a pile on the middle of each piece of foil
  • Lay each sea bass filet over the pile of spinach leaves
  • Sprinkle half the garlic and ginger root over one filet and the remaining half over the other filet
  • Drizzle a few teaspoons of soy sauce over each filet
  • Roll up the ends of the aluminum foil to create a closed "tent" over each filet and spinach
  • Place in the oven for 10-11 minutes
  • Untent the foil (but leave in the foil) and serve in a bowl (the juices from the soy sauce, spinach and fish will have melded together to form a delicious sauce/soup that you won't want to lose).
