To celebrate Spring... okay it was too cold to go outside and start yard work this weekend- so I baked.

These rich dark chocolate cupcakes are better for you than boxed mix (you can see what's going into it and dark chocolate= antioxidants).

Butter cream frosting (I found a recipe sans shortening!) is always a nice complement to a rich cake, once you try it- you will never go back to icing in a can.

Have Cupcakes Jumped the Shark?

The cupcake craze has been mounting for a few years now... at least. And while the theories for cupcakes' popularity are varied (they're portion-controlled, easy to bake, easy to serve, no need for utensils...), there's no denying almost everyone loves a cupcake (or 12).
