Celebrate This: National Pie Day

I knew this day would come when I was first asked to write the daily Celebrate This blog, and never did I imagine it would be such a bittersweet occasion. National Pie Day is obviously the food writer's Christmas, that and well, Christmas, but it comes with the burden of settling on just a few pies out of the vast selections of pies available about just about every baking blog. While picking just four out of the mountains of pie recipes upon pie recipes was more of a challenge than coming up with ideas for World Hello Day, I managed to pull through and the outcome is rather tasty to say the least. Feast your eyes on these pies, give 'em a try and feel free to share your favorite recipes for America's favorite dessert.

Okay, so I lied a little when I said that picking pies for the round-up was a difficult task, at least in the case of this first recipe from If You Give A Girl a Cookie. This mouthwatering recipe for Salted Caramel Apple Pie stands apart from its crusty peers as an unparalleled pie, since it not only haunts my mind as a pretty picture on an equally pretty blog, but ladies and gents, I have seen the salted caramel in all its golden glory and I have tasted the raw sugar-sprinkled crust and it was delish! That's right, this recipe is tried and tested by me, your faithful blogger, and I can attest to its greatness, as can the slew of energetic relatives who gobbled it up this past Thanksgiving.

Perhaps you went a little overboard on the cranberries this year and bought up every last bag of Ocean Spray's raw berries for fear that there wouldn't be enough for that awesome relish you make every year and your great aunt Sue just raves about. Well relish in this pretty piece of holiday heaven from baking maven behind Weekly Bite. Pumpkin-Ricotta Cheesecake Pie wins the title of my decadent dessert to grace Celebrate This. Fluffy and golden, this dreamy piece of pie has me drooling all over my keyboard!
