20 Summer Desserts

After dieting all winter and spring long so we fit into our bathing suits, we tend to indulge quite a bit in sweet treats when summer arrives. But can you blame us?

The summertime is all about entertaining. Plus, it's THE season for two of our favorite desserts: ice cream and s'mores!

On the one hand, ice cream is cold, creamy and refreshing. It's easily molded and added into dessert recipes. Whether on top of a cobbler or encased in a shell of chocolate, we'll eat ice cream a million different ways, no complaint.

Then, there's s'mores. They're like a tri-fecta of heavenly goodness. Chocolate, graham and marshmallow - what's not to love? And if ice cream is easy to get creative with, then s'mores are even easier!

From cakes to cookies to classics, we've got some tasty summer dessert recipes for whatever party you throw this summer. Some of them are all about the s'more, some all about the ice cream, others about whatever else tickles your sweet tooth. But, all of them are a must try!


  • It's a Sno-Cone! Well, no. But it tastes just as good. Fool your friends with this easy and colorful dessert that screams summer - a sno-cone cupcake!

  • Candy and ice cream - you really can't go wrong. Lindsay Morton shows you how to make these Twix Ice Cream Pie Cups. Crunchy, creamy and cold they're a perfect summertime treat.

  • You've had the classic s'more sandwich. If not, you've been living under a rock and need to taste one ASAP. Then, try this recipe for a s'mores trifle dessert.

  • "If you like pina coladas..." you'll love this summer dessert. We made a pina colada cupcake at one of our summer parties last year and it's been a request at almost every one we're invited to this year.

  • BBQs abound during the summer, as do meals on sticks. Whoever said you had to stop at apps and dinners on a stick though? We prefer our desserts kebab style. Sort of like these amazing banana spit cupcakes.

  • We've warned you we're a bit cupcake crazy. No celebration - big or small - is a hit without some sort of cake. At least that's our thinking. We'll show you how to make cupcakes in a jar for a picnic dessert that's easy to transport, mess-free to eat and cute to display.

  • Though push-pops originated with ice cream, they've now become a hot cupcake trend this summer. We took the patriotic approach for our cupcake push pops, but you can get creative with any look or flavor you want - they're super easy to make!

  • For non-cake lovers there's this treat. Watermelon cupcakes. No, they're not cake! This is a no-bake cupcake recipe that's healthy, too!

  • More ice cream! This time we're sipping it in a classic ice cream soda recipe. We've got three easy recipes, but our favorite has to be the strawberry. Yum!

  • You'll vote the same way as we did after you try them. Whip up a batch of our world's best peanut butter coookies for your next playdate, picnic or pool party. They'll disappear faster than a snowflake hitting the ground in July. Ha!

  • We've got plenty of s'mores desserts, but this one has to be on the top of our favorites list. Just look at it!

  • Finally, we've got to mention churros. Yes, they're synonomous with Cinco de Mayo, but we love them, and nothing reminds us more of carnvials and outdoor fairs we attend each summer then fried dough covered in powdered sugar.
