Beautiful Bellini Recipes for a Spring Brunch

When chirping birds and bright sunlight become your new alarm clock, and you can finally break out those adorable sundresses (with a light jacket, of course) it's official -- spring is finally here.

And with the long-awaited season comes blooming flowers, leafy trees and of course, spring brunches. It's no shock that we love everything about brunch over here at Celebrations. We love the option of having breakfast food or lunch food (or a mix of both), a good cup of coffee and the option to enjoy an adult beverage before happy hour.

A spring brunch wouldn't be complete without a delicious Bellini recipe. The fizzy cocktail is typically made with Prosecco or champagne, and fresh peach puree. However, thanks to a boatload of fresh fruits in season (and a blender), you can mix up a variety of flavored Bellinis for a spring brunch.

We love the idea of throwing together fresh berries, herbs such as mint or thyme and even flowers such as lavender or hibiscus for a bold and beatiful Bellini recipe. So check out some of our favorites, and mix one up for you and your besties this year.

  • Grapefruit Mint Bellini

Grapefruit and mint may seem like an odd combination, but this recipe from Camille Styles proves the tart citrus juice and bold mint taste not only go well together, but make a pretty orange color.

  • Honeydew MelonBellini

Honeydew always manages to find its way into our fruit salads and breakfast buffets, so it's about time we put it into a cocktail! This Bellini from Laylita takes fresh honeydew slices and purees them for a sweet and smooth fruit juice. Add to a glass of bubbly, and you have the perfect spring drink!

  • Strawberry Basil Sorbet Bellini

If there's one thing we love more than cocktails, it's ice cream. This strawberry basil sorbet bellini from Country Cleaver combines the sweet tastes of fresh strawberry puree and forzen strawberry sorbet into a glass with champagne and basil. So delicious.

  • Lovely Lavender Bellini

Fresh dried lavender flowers, some sugar and water is all you need to make this delicious lavender simple syrup. Once that's done, pour it into a champagne flute and top with champagne and peach juice. Plus, the garnish is the best part! Get the recipe from The Chic

  • Very Berry Bellini

We love fresh berries in the spring and summer, which is why this Very Berry Bellini from Bell'alimento is the perfect spring treat. You get a full serving or fruit and your champagne -- win-win!

  • Vodka Peach Bellini Recipe

Sparkling wine and fresh peaches have always been the classic Bellini staples. But we decided to take it up a notch with some peach vodka too. Check out our Vodka Peach Bellini for a fun, fruity drink!
