Clever Leftovers: Turn Them Into Mini Dinner & Dessert Pies

Maybe it's the inordinate amount of cake pops or Jell-O shots I've been enjoying at parties recently, but it seems mini just makes meals better.

With this idea in mind and more leftovers than I could possibly handle, I started looking for a clever way to use up what I had on hand in the fridge. I stumbled across a mini pie idea using Bisquick and decided to give it a try.

The idea is, you prep your Bisquick mix same as you would to make waffles, but instead of dropping a ladle on the waffle maker, you distribute it evenly into cupcake pans and stuff with lots of tasty leftovers.

Here are 6 combos I tried along with the basic how-to. For the recipe I used for inspiration and adapted, head on over to BettyCrocker.com.

  • To make your mini pies you just mix up 1/2 a cup of milk, 2 eggs and 1/2 a cup of Bisquick. Then, in a greased muffin pan, spoon a tablespoon of the mix into the bottoms, add a 1/4 cup of your filling, then top with another tablespoon of mix. Bake at 375 until golden brown - that's all!

  • Buffalo chicken is a favorite of all - mix up some pulled Buffalo chicken you have leftover from your Skinny Buffalo Chicken Wraps with chives, red peppers, tomatoes and low-fat shredded cheddar.

  • Got lots of veggies lying around the fridge? Chop 'em and mix 'em with some feta cheese for a Greek vegetarian-friendly mini meal. We used grape tomatoes, black olives, red onion and roasted red pepper.

  • It's grilling season year-round in our house. If you find you've got a link of sausage or extra hamburger, don't toss. Chop your meat and mix it in with your favorite topping arrangements. We used the grilled onions, peppers and fresh basil we cooked up with our chicken sausage for this filling.

  • And these mini-pies aren't just for dinner - you can add your favorite dessert flavors to them, too! This combo was our favorite: peanut butter, banana and caramel. Serve with a scoop of ice cream for a real treat!

  • Lots of extra berries on hand? Mix with fresh mint for a fresh and light dessert pie.

  • And finally, though you can't tell from this picture, our creme de la creme - Nutella, mini marshmallow and strawberries. I can't say enough about how DELISH this one was!
