Cut the Carbs Out of Pasta Salad: 6 Must-Try Cold Zucchini Noodle Dishes

Gluten-free is on the rise, and we’re always looking for healthy alternatives for dinner, so we’re turning to zoodles (zucchini spiralized into noodles) to fill us up!

Using a mandolin or a veggie spiralizer, you can make your own zoodles right at home. The squash lends itself nicely to hearty noodles that can be used in place of standard old wheat and flour pasta. And even though we love the idea of baking them into our favorite comfort food pasta dishes, we've rounded up only no-heat recipes so you can stay cool even in the dog days of summer.

Make a delicious cold noodle dish to replace traditional pasta salad, serve at a family BBQ or just for a weeknight dinner. With some creative toppings and spices, guests will have no clue these dishes are completely pasta-free!

  • Raw Avo Lime Zoodles

This recipe from Zomt couldn't be easier (and it couldn't be tastier!). If you can make zoodles and shake them up, then you can make this delicious dinner.

  • Rad Rainbow Raw Pad Thai

Healthy and vegan, Oh She Glows has won the prize for most colorful dish we’ve seen.

  • Asian Zoodle Salad Jars

These Asian Zoodle Salad Jars from Foxes Love Lemons are a great no-heat treat for the summer months. Plus who wouldn’t want to show off one of these beauties around the office!

  • Caprese Zoodle Salad

Caprese salads are always a summer go-to. This recipe from Modern Mrs. Cleaver suggests trying out this classic with some added zoodles. Why didn’t we think of that?

  • TAC Zoodles

TAC stands for Tomato Avocado and Chicken, and really what more could we ask for in a zoodle dish? This no-heat meal from Summer Salt Life is great for busy summer nights because it’s quick and delicious. For the cold chicken, we’re thinking about last night’s leftovers…

  • Cold Zoodles with Spicy Peanut Sauce

Leaving the heat off in the kitchen doesn’t mean that you have to leave the heat out of your meal. We love switching out the hot stove for some added spice. If you want to enjoy this dish long after the summer is over, My Skinny Sweet Tooth also suggests throwing the finished product onto the skillet for some warmth.
