Cut the Carbs Out of Pasta Salad: 6 Cold Zucchini Noodle Dishes to Try This Summer

Gluten-free is on the rise, and we’re always looking for healthy alternatives for dinner, so we’re turning to zoodles (zucchini spiralized into noodles) to fill us up! 

Using a mandolin or a veggie spiralizer, you can make your own zoodles right at home. The squash lends itself nicely to hearty noodles that can be used in place of standard old wheat and flour pasta. And even though we love the idea of baking them into our favorite comfort food pasta dishes, we've rounded up only no-heat recipes so you can stay cool even in the dog days of summer.

Make a delicious cold noodle dish to replace traditional pasta salad, serve at a family BBQ or just for a weeknight dinner. With some creative toppings and spices, guests will have no clue these dishes are completely pasta-free!
