Trending Now: Surprising & Delicious Cauliflower Substitute Recipes

Kale is soooo 2013. Cauliflower is the new superfood veggie power player, and is packed with B vitamins and antioxidants. But unlike kale, cauliflower can be dressed up and disguised as your favorite foods, all the while cutting back on fat, calories and carbs. Oh, and it's naturally gluten-free.

Cauliflower can be mashed together in a food processor to make healthy cauliflower mashed potatoes, or "riced" and mixed with other good-for-you ingredients to make a gluten-free pizza crust. You can also substitute cauliflower for chicken in some of your favorite dishes, including buffalo chicken and orange chicken.
