Skinny Pumpkin Recipes for Fall

The crisp autumn air, changing leaves and Sunday football are some of the biggest perks of fall, but nothing compares to the distinct taste of the season; everything and anything pumpkin.

As much as we love the festive squash in anything from lattes to pie, the tasty, seasonal treats are usually not so good for our diets. Instead of depriving ourselves from the most delicious food of fall, we’ve compiled some low-fat recipes that include all things pumpkin.

So treat yourself this autumn to some delicious pumpkin-flavored snacks, and don’t feel guilty about going back for seconds. Or thirds, we won’t judge you.

  • Skinny Pumpkin Spice Latte

Although Starbucks is the king of the Pumpkin Spice Latte (and is celebrating 10 years of serving the drink!), we made our own version with less fat and sugar. Plus, the seasonal beverage is super easy to make at home. No long wait in line, AND no extra calories? Getting your pumpkin and caffeine fix has never tasted so sweet.

  • Mini Pumpkin Chocolate Chip Muffins

Chocolate makes everything better, especially these Skinny Mini Pumpkin Chocolate Chip Muffins from Skinny Taste. The better-for-you recipe uses pumpkin puree, egg whites and whole wheat flour, but the yummy muffins taste just like their full-fat counterparts. If mini muffins aren’t your thing (say what?), then you can make them in a full-sized muffin tin for about half the amount of muffins for a delicious on-the-go breakfast or dessert.

  • Skinny Pumpkin Parfaits

Parfaits are such an adorable treat. The presentation of the layers and toppings is so nice, I almost feel bad digging my spoon in and messing up the natural design. But for these pumpkin parfaits from Six Sisters Stuff made with cottage cheese and pumpkin puree, I don’t think I’ll think twice. Top the recipe off with vanilla wafer cookies and light whipped cream, and you have a quick and tasty snack.

  • Roasted Pumpkin Seeds

Pumpkin puree, whether scooped out of the squash or from a can, is an essential ingredient in making anything pumpkin flavored. However, the seeds from pumpkins are just as delicious. The best part? They’re packed with vitamins and antioxidants, and make for a naturally healthy snack. Whether you prefer salty or sweet seeds, we've got the ultimate pumpkin seed recipe that takes what nature already gave us, and adds some spices for a tasty kick. Roasted pumpkin seeds are the perfect anytime, anywhere snack. All the more reason to carve up your own pumpkin!

  • Skinny Pumpkin Pie Dip

Pumpkin pie isn’t just for Thanksgiving – or to be served in pie form, for that matter. This Skinny Pumpkin Pie Dip from The Domestic Rebel takes all of the rich, creamy flavor of pumpkin pie and transforms it into a sweet low-fat dip. She uses graham crackers to scoop up the seasonal goodness, and garnishes with a few candy corns. It’s perfect to make for a fall party – or to eat entirely by yourself in one sitting, who are we kidding?

  • Skinny Pumpkin and Turkey Chili

There’s no shortage of pumpkin sweets, but a recipe for a hearty and filling meal made with pumpkin (that’s not a diet breaker) is hard to come by. Insert the Skinny Pumpkin and Turkey Chili recipe from The Skinny Fork. The flavorful recipe is chock-full of spices and healthy ingredients, and can easily be thrown together in a short amount of time. Leave the crock pot on for 6-8 hours to cook the chili for a tasty meal that will leave your house smelling amazing, too!
