What to Make with Thanksgiving Leftovers

Don't even think about tossing those Thanksgiving leftovers! The feast may be over, but that doesn't mean leftover turkey, cranberries, ham or other veggies have to go to waste.

Thanksgiving is all about being grateful for our many blessings and delicious food is a big one. Instead of chucking your leftovers, turn them into tastier meals post-Thanksgiving. We promise - you won't even know you're eating leftovers from Thanksgiving dinner! The recipes here get super creative with classic Thanksgiving ingredients to turn the expected into something deliciously unexpected.

Check out just a few ideas to use Thanksgiving leftovers in our gallery!

  • Give the ever popular Thanksgiving sandwich a run for its money by serving up this tasty Reuben recipe. It's a tangier, zestier and totally different flavor combo than dinner the night before, which is always nice, but even better - it's a skinny version! Which we can all appreciate after the big feast.

  • Turn your leftover peas into cupcakes for a vegetable-infused dessert that's as delicious as the apple pie you had the night before, but a whole lot healthier! A smart blend of steamed peas and lime, these cupcakes are full of flavor.

  • Do you have more leftover sweet potatoes than you know what to do with? Chances are you'll have guests popping in and out in the days after Thanksgiving, so have these tasty sausage and sweet potato appetizers on hand. The sausage adds a whole new flavor and texture to the mix, but the sweet potato keeps it in line with the celebration.

  • Really want to stray from the warm savory fall flavors of Thanksgiving with your turkey leftovers? Go with our turkey enchiladas. They're as yummy as they sound and will really give you a fresh taste of the holiday bird!

  • Cranberries - in all shapes and forms - make their way onto the Thanksgiving table with gusto, but are sometimes left there, too. Blend your cranberries with unexpected flavors like jalapeno, lime, cilantro and fresh ginger for a salsa recipe that'll keep you happy post-Thanksgiving. Just replace the frozen berries in our cranberry salsa recipe with whatever you have and tweak slightly to get the right consistency.

  • At so many holiday celebrations someone insists on asparagus, but as much as we may love it on the side of our turkey, we REALLY love it in this Fontina Gruyere cheese tart. The flavor combo in this recipe is one-of-a-kind and works great for an easy lunch the day after Thanksgiving.

  • No matter what sort of veggies you have leftover after Thanksgiving, this one pot (the veggies are already cooked!) vegetable casserole finds a tasty way to use them. It's hearty, flavorful and a simple dish to put together after all that Thanksgiving cooking madness.

  • Another casserole recipe, this sausage and cheese dish will use up any leftover rolls, sausage and cheese you may have from the Thanksgiving celebrations. It's a great dish to serve at brunch if you've got guests staying over!

  • If sausage doesn't make it onto your holiday menu, but ham does, consider this strata recipe instead. Again, it's a great dish to serve guests who are still with you in the morning and it won't taste like a Thanksgiving leftover!
