Quick Cioppino with a Twist

A warm, healthy stew chock full of your favorite seafood and simmered to perfection. And the best part? It can be ready for you and your family in just 30 minutes! 


Preparing a warm dinner in the cold winter months for your family doesn't have to be too complicated or time-consuming. In fact, it doesn't even have to be boring. This Cioppino with a twist from Pasta Fits is the perfect example of how a quick family dinner can be thrown together, without skipping on flavor or ingredients. 

This recipe includes a small amount of shell pasta, which makes a savory addition to the recipe. With just a single serving of pasta mixed with fresh mussels, shrimp and a fish of your choice and a handful of hearty veggies, this stew is a delicious and filling dinner that's sure to keep you and your loved ones full -- and warm!

Ingredients
  • 2 oz. shell pasta
  • 1 tablespoon(1/2 ounce) extra virgin olive oil
  • 1/4 cup (1 ounce) roughly chopped shallot
  • 2 tablespoon roughly chopped garlic
  • 1 teaspoon thyme leaves
  • 1/2 cup (4 ounces) white wine
  • 2 cups (1 pint or 16 ounces) fish stock
  • 1/4 teaspoon saffron threads
  • 1 cup (8 ounces) roughly chopped tomatoes
  • 6 ounces (approximately 12 pieces) mussels
  • 8 ounces (approximately 12 pieces) shrimp
  • 8 ounces of your favorite fish, cut into bite-sized chunks
  • 4 teaspoons fresh parsley
Directions

Bring a large pot of salted water to a boil. Cook the shells according to package directions. Drain and reserve.

Heat a large pot over medium heat. Add the oil and sauté shallot, garlic, and thyme until aromatic, about 1 minute. Add the wine, fish stock, saffron and tomatoes to the pan and bring to a boil.

Add the mussels, cover and steam until the shells open, about 5 minutes. Discard any that don’t open.

Add the shrimp and fish and cook until cooked through, about 2 minutes. Taste and adjust seasoning with salt and pepper.

Divide between 4 bowls and garnish with parsley.

Makes: 4 servings
