Cream Cheese & Roasted Red Pepper Heart Tea Sandwiches

One of my favorite sandwiches to make are tea sandwiches. They are just so cute and dainty and I love how they look with the crusts cut off. Plus, I love how easy and simple they are. They normally only include a few ingredients and they come together very quickly.


For this recipe, I used cream cheese – the essential tea sandwich ingredient – and then added Roasted Red Peppers and fresh sliced Avocado. Just those simple ingredients make a tasty, and might I say perfect, little tea sandwich.

To make these tea sandwiches even cuter for Valentines Day, I cut them into little hearts. I used my knife to cut the sandwiches, but to make things even easier (and for a more perfect presentation) you can use a large heart cookie cutter.

Ingredients
  • 8 slices whole wheat bread (you can use white bread if you prefer)
  • 4 ounces cream cheese
  • 1 avocado, sliced
  • 6 ounces roasted red reppers
  • Salt
  • Pepper
Directions

Place 4 slices of whole wheat bread on a clean counter. Carefully spread the cream cheese on the complete surface of each slice of bread. Place a couple slices of avocado on top of the cream cheese, and then layer a few roasted red peppers on top. Finish with a sprinkle of salt and pepper on each. Top each sandwich with another piece of whole wheat bread.

Either using a heart cookie cutter, or just a sharp knife, cut your sandwich into a large heart shape. Serve and enjoy immediately.

These are best made and assembled right before serving. If you would like, you can make them in the morning and enjoy them later on in the day, but I recommend no more than 24 hours.
