Gluten-Free Summer Picnic

Everything tastes better when sprawled out on an adorable checkered blanket, and devoured in the warm summer sun. Picnics are the quintissential summer adventure, but you don't have to dive into the traditional sandwiches and potato chips to have a delicious picnic. 

Brittany, the resident Social Media Gal, and I embarked on an after-work picnic to enjoy the summer sun and come delicious gluten-free bites. We of course sipped on a gluten-free adult beverage; Angry Orchard Hard Cider in green apple. The sweet cider is a good beverage to sip on in the summertime since it has notes of kiwi and honeydew. It's the perfect alternative for adults who aren't beer drinkers, but won't something that's still tasty and easily sippable. (Warning: be aware of your local park or city's open container and glass bottle laws). 



For our snacks, we brought along carrots and hummus, the perfect tasty and healthy snack. If you're like me and love pretzels and potato chips, but want something a little more diet-friendly, then you'll love snapea crisps. They are made with brown rice and ground snapeas, and baked to perfection. With a fraction of the calories of chips! (We picked up Trader Joe's brand, but other brands are just as tasty).



The main attraction was a yummy Kale and Edamame Salad with some yummy seasonal treats such as cherry tomatoes, arugula and topped with dried cranberries and chopped almonds.

And we couldn't forget about dessert. We snacked on my famous Gluten-Free Chocolate Chunk & Walnut Cookies to top off our light summer meal. They're made with almond flour (and obviously include nuts), so they're not ideal for people with nut allergies. But for people looking to cut back on sugar, calories and eliminate wheat, they are perfect!
