Goat Cheese, Garlic & Green Onion Stuffed Mushrooms

Stuffed mushrooms are already a healthy and easy recipe to whip up, and make for a great appetizer or side dish. This flavorful recipe combines the tangy tastes of goat cheese, onions and fresh garlic for an irresistible dish.

This recipe only calls for a few ingredients, which means it's not only a healthier option, but also super easy to make. All you have to do is stuff the mushroom caps with a simple cheese mixture, and then bake the mushrooms until they are warm and soft. 



These are best served warm from the oven, so enjoy immediately! Serve with my Baked Zucchini Fries and Skinny Baked Chicken Fingers for some skinny recipes that taste just like your favorite comfort food. 

  • 30 full mushrooms
  • 4 ounces goat cheese, softened
  • 4 green onions, thinly sliced
  • 2 cloves of garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Preheat the oven to 400 degrees F. Line a baking sheet with foil and set aside until ready to use.

In a medium bowl, stir together the goat cheese, sliced green onions, minced garlic, salt, and pepper. Set aside until ready to use.

Carefully clean the mushrooms by wiping them with a paper towel, being sure to clean off all the dirt. While cleaning the mushrooms, carefully remove the stem and clean out the inside of the cap on each mushroom.

Once cleaned, place all the mushroom caps on the prepared baking sheet, with the inside of the cap facing upward.

Using a teaspoon, scoop the goat cheese mixture inside each mushroom cap, and use your fingers to press the mixture into the cap.

Place the mushrooms in the oven to bake until the top of the cheese is ever so slightly browned and the mushrooms are fully cooked and shrunk in size, about 15 minutes. Serve immediately.

These can be assembled ahead of time and then baked right before serving. These last up to 2 days in a sealed container in the refrigerator.
