School's Back In Session — Get the Kids Fed With Five Speedy Breakfasts

Everyone knows that breakfast is the most important meal of the day—and it’s especially true for kids. Without enough to eat in the morning, children have trouble concentrating and learning in school.

But racing to get dressed, brush teeth and load the car can mean this meal gets short shrift. To help, we’ve got five fast and easy recipe ideas for kids’ breakfasts that’ll satisfy your crew and get you to work on time.


The Perfect Parfait

Layers of luscious yogurt and juicy fruit with a crunchy surprise inside will no doubt appeal to your young crowd. Parfaits can be prepared quickly in the morning or set up the night before for an even faster departure time. Try Greek yogurt (maple or vanilla flavors are delicious), with a layer or two of granola or breakfast cereal plus chunks of banana or peaches. Top with a drizzle of maple syrup or honey or a spoonful of all-fruit preserves. Egg ‘n Cheese

This fast recipe is best made free-form, using any leftover bits you have in the fridge, along with your favorite cheese. Lay two tortillas on the counter and top one side with pieces of roast pork, chicken, sautéed veggies or just salsa from a jar. Add grated cheese and cover with the other tortilla and then heat it up in a skillet until golden brown. This treat can be wrapped in a piece of foil and eaten on the way to the car.

Whip up these drinkable meals the night before or in the morning, while your coffee is brewing. Any yogurt and fruit pairing works here, though a few to try include blueberry yogurt with raspberries, mango yogurt with kiwi or strawberry yogurt with pieces of ripe melon.


Nut Butter Fold-overs

The fastest meal in the morning is a smear of nut butter on bread with sliced fruit. To make it portable, just fold it in half and wrap it in paper napkin. Almond, peanut or cashew butter taste great on whole wheat or oatmeal bread. Place a layer of thinly sliced apples or pears on top and then fold and go!
