Perfect Paleo Pancakes: 6 Mouthwatering Brunch Recipes

Hi, my name is Christina, and I'm a carbivore. I love any and all things made with carbohydrates (the simpler, the better), and have a hard time resisting anything bread-like that comes my way. 


Which is why when I found out I have a gluten sensitivity, my bread-loving heart was crushed. To help my body feel better, I've been weening off carbs, which really hasn't been as bad as I thought it would be. Now that everyone seems to be gluten-free these days, it's been pretty easy to make the transition into a gluten-free (or in my case, a less-gluten) lifestyle. 

Insert the Paleo diet, which basically means eating mostly meat and veggies, with some fruit and minimal complex grains (like quinoa). It also means no bread or simple carbs of any kind. I personally am not Paleo but a lot of people have embraced this lifestyle, which means an influx of really delicious Paleo-friendly recipes on Pinterest. 

After giving up grains, the one thing I was really craving and missing was a stack of fluffy, syrup-covered pancakes. To cure my breakfast woes, I made some gluten-free protein pancakes one Sunday morning, and they actually turned out pretty good -- at least, taste-wise. It was a bit of a trial-and-error, and the photos did not turn out so hot (which is why you are not seeing them here). Maybe I will be inspired enough to make them again and share with you all, but in the meantime, take a look at some more delicious Paleo pancake recipes I have found. With some minor adjustments and all-natural ingredients, I promise these pancakes taste just as good, if not better than their carb-heavy counterparts. 

 

Basic Paleo Pancakes

Almond and Cinnamon Pancakes

Almonds and cinnamon are basically staples in any gluten-free or Paleo diet. The two come together for a delicious breakfast recipe in this pancake recipe from Claire K Creations

 

Paleo Coconut Pancakes

Coconut has become a wonder fruit in the health world lately, with people frequently using coconut oil, coconut milk and even coconut flour in their good-for-you recipes. This Paleo pancake recipe from Ancestral Chef uses coconut flour and milk, and cooked with coconut oil. Add in a dash of vanilla extract for a delicious coconutty breakfast. 

 

Paleo Carrot Cake Pancakes

Most carrot cake recipes aren't very good for you. It's a good thing these Paleo Carrot Cake Pancakes from Paleo OMG are seriously delicious. The ginger, nutmeg, cinnamon and walnuts really make the recipe stand out. 

 

Paleo Banana Pancakes

When Jack Johnson was singing about banana pancakes, he probably wasn't thinking about the Paleo-friendly version. (I mean, this was 2005 before the Paleo craze really hit). Luckily, ADKcreative is here with a simple, yet delicious recipe. 

 

Flourless Banana Chocolate Pancakes

I've saved the best for last. I'm seriously such a sucker for chocolate-chip pancakes and waffles. It's like dessert meets breakfast meets magic. This mouthwatering Paleo recipe from Living Healthy with Chocolate doesn't actually use chocolate chips, but the recipe calls for chocolate almond butter, which is almost as good. I'm going to cheat and add some organic dark chocolate chips to my recipe (try and stop me!)
