Whole Wheat Orzo Tabouleh

This traditional Arabian dish is made a little bit healthier by using whole wheat orzo, and chocking the recipe full of heart-healthy veggies. 


The rich flavors of scallions, cucumber, mint, tomatoes and garlic makes this pasta entree from Pasta Fits incredibly flavorful without the unwanted guilt. Ingredients
  • 1/2 pound whole wheat orzo
  • 3/4 cup (1/2 ounce) thinly sliced scallions (about 3)
  • 1 1/2 cups (7 1/2 ounce) chopped hothouse cucumber
  • 1 cup (1 ounce) roughly chopped parsley
  • 1/2 cup (1/2 ounce) finely chopped mint
  • 2 cups (12 ounce) roughly chopped tomatoes
  • 1 teaspoon grated garlic
  • 1/4 cup (2 ounce) lemon juice
  • 5 tablespoon extra virgin olive oil
Directions

Bring a large pot of salted water to the boil. Cook the orzo according to package directions.

Cool completely before adding scallions, cucumbers, parsley, mint, and other ingredients to the orzo. Toss well. Add salt and pepper to taste.
