Awesome Apricot Muffins

Thanksgiving officially kicks off the holiday festivities and it’s just around the corner, planning to sneak up on us once again. This year, instead of only bringing a side dish to your family or friend’s home for the holiday, surprise them with an extra special sweet treat to thank them for hosting such a delectable dinner.


Not only do these muffins in a jar make an adorable gift basket, but I guarantee the host will be incredibly appreciative that they aren’t on the hook for making breakfast the next morning as well! I’ve experimented by topping these muffins off with various fruits and they are just as delicious… allow yourself to get creative by using ripe nectarines or even plums instead of apricots!

 

 

Ingredients
  • 3 cups chopped leeks (white part only)
  • Nonstick cooking spray
  • 1 1/2 teaspoons baking powder
  • 1 cup all-purpose flour
  • 1/4 teaspoon kosher salt
  • 6 tablespoons unsalted butter at room temperature
  • 1/3 cup sugar
  • 1 egg
  • 2 teaspoons orange zest
  • 1 teaspoon vanilla extract
  • 1/3 cup whole milk
  • 2 apricots, halved, pitted, cut into 1/4 inch wedges
  • 3 tablespoons raw sugar
  • 6 mini mason or ball jars, for baking
Directions

Preheat oven to 350*.

Coat ball jars with nonstick cooking spray.

Whisk baking powder, flour, and salt in a medium bowl.

Using a mixer, beat butter and sugar in a different bowl until light and fluffy.

Add egg, orange zest, and vanilla extract. Beat until combined.

With mixer on low, alternate adding dry mixture and milk into a bowl until incorporated.

Divide batter among ball jars – about 1/2 way full.

Top with apricot, nectarine, or plum slices. Sprinkle with sugar.

Place ball jars on a cookie sheet and bake for approximately 20 minutes or until cake tester comes out clean.

Transfer jars to a wire rack and let cool. Once cooled, put lid on jar and top with pretty ribbon for the perfect hostess gift!
