Bacon Plum Chutney

Bacon makes everything better. At least I think so, and hopefully you agree.  Now-a-days BACON IS MAKING ITS WAY INTO MORE THAN JUST BREAKFAST . Its salty-smoky taste adds a great flavor to most dishes. Combined with sweet plums, this bacon chutney has it all.

  • 4 Strips Bacon, Diced
  • 1/2 cup Sugar
  • 1 cup Red Wine Vinegar
  • 4 Medium Plums, Diced
  • Pinch Salt

Sauté the bacon until crispy, but not burned. Remove the bacon from the pan and drain to remove any excess oil. In a medium saucepan, combine the sugar and vinegar. Place over medium heat and bring the mixture to a slow boil, allowing the sugar to dissolve completely. 

Add the bacon, diced plums, and salt; stir to combine. Reduce the heat to low and allow the mixture to reduce and thicken. The plums will release all of their liquid and will completely soften. This will take about 45 minutes to 1 hour. 

Transfer the chutney to a mason jar, sealing the top. Place the jar in boiling water for 10 minutes. Remove from the water and place in the refrigerator to cool.

The chutney is ready to use when it has cooled to room temperature or below. Lasts up to 2 weeks when kept in a sealed jar in the refrigerator.
