Bacon-Wrapped Mushrooms with Ricotta and Chives

Here is a really simple idea for an appetizer that is perfect for serving up with a cocktail when the guests first walk into your holiday party.

I've had bacon-wrapped dates before, and I think they are great. But my husband was never a fan because of how sweet they are, so I started thinking of other things I could wrap in bacon. Mushrooms came to mind and since they have that hollow center after taking off the stem, they are perfect for filling with cheese. The salty, earthy, creamy combination of these bites is irresistible and they will disappear in seconds.

  • 6-8 pieces of bacon
  • Two 16-ounce packages of white mushroom
  • 1/2 cup of ricotta
  • 1/4 cup of chopped chives
  • Toothpicks

Preheat oven to 350 degrees. Mix the chives into the ricotta.

Wash the mushrooms and remove the stems. Cut each slice of bacon into half.

Fill each mushroom with the ricotta and chive mixture, wrap with a piece of bacon and put a toothpick through it to hold it together.

Place mushrooms on a baking sheet and bake for 25-30 minutes until bacon is crispy. Once cooled, place on a serving tray, serve and enjoy!
