BBQ Recipe for a Crowd: Loaded Tater Tots

When I’m creating a menu for a large crowd, I always like to throw in a definite crowd pleaser — a dish that everyone will love, no matter what. And these BBQ Chicken Loaded Tater Tots are just that!

The dish consists of crispy tater tots, topped with melted cheddar cheese, shredded BBQ chicken, bacon, and chopped tomato, and it’s all finished off with a large drizzle of BBQ sauce. Make this dish at your next party, and I promise you, everyone will be asking for more!

1 large chicken breast

8 pieces of bacon, pan fried and chopped into small pieces

1 32-ounce bag of tater tots

1 cup shredded cheddar cheese

1 tomato, chopped

BBQ sauce, for chicken and topping

Start by smothering the uncooked chicken breast in BBQ sauce and grilling it until juicy and cooked throughout. (If you want to take the easier approach, you can use store-bought rotisserie chicken, shred it, a and rub it with BBQ sauce afterwards.)

While the chicken is cooking, place the bacon in a frying pan and cook until it’s nice and crispy. Once it’s done cooking, place the bacon on a plate lined with paper towels. Let it cool slightly, then chop the bacon into small bite-size pieces. Set aside until ready to use.

Preheat the oven to 375 degrees and place the tater tots in a 9x9 baking dish. Bake the tater tots until they are golden brown and crispy, about 30 minutes. (Time will vary depending on your oven and the brand of tater tots.) Meanwhile, shred your cooked chicken breast.

Once the tater tots are done cooking, remove from the oven and sprinkle with cheddar cheese. Place the baking dish back in the oven and allow the cheese to melt. Once the cheese has melted, place the shredded BBQ chicken and chopped bacon on top of the tater tots and cheese and put the dish back in the oven to quickly heat up the meats.

Once heated, remove the dish from the oven and sprinkle with the chopped tomato. Then, drizzle the extra BBQ sauce on top of the whole dish. Serve immediately and enjoy!

Note: These can be made 24 hours ahead of time and heated right before serving. Just place completely assembled dish in a 365-degree oven for 20 minutes. Leftovers can be kept in the refrigerator 2 days afterwards.
