Beatles-Inspired Egg Man Party Sandwiches

While we aren’t too sure what John Lennon meant when he said “I am the egg-man” we like to think his imagination settled on something as tasty as these egg salad sandwiches.


These funny finger foods are inspired by the lyrics of the Beatles song “I am the Walrus” a nonsensical song and a favorite of ours. Kids and grownups alike will get a kick out of these people shaped sandwiches, and Beatles fans everywhere won’t be able to resists singing “goo goo g’joob” as they bite into one of these exquisite egg-men.

Ingredients:

1/4 cup Miracle Whip

1 tablespoon cider vinegar

1 teaspoon salt

1/4 cup onion, minced

1/2 teaspoon Worcestershire sauce

1 teaspoon prepared mustard

1/4 teaspoon ground white pepper

6 hard-boiled eggs

1 cup celery, thinly sliced

8-12 slices whole wheat bread

Special Tools:

Gingerbread man cookie-cutter

 

Directions:

In a large bowl combine Miracle Whip and vinegar, salt, onion, Worcestershire sauce, mustard and pepper. Mix until well incorporated.  Dice hard boiled eggs and add to mixture, and stir in remaining ingredients, save for the bread and mix thoroughly.

Before piling on your egg salad, cut out your bread men, this will make for more exact cutting, and leave you with much less of a mess to clean up.  Once your cut-outs are finished, discard of crusts and lightly toast in the oven. Spread a generous spoonful of egg salad on half of the toasts and top with another piece of bread.

Serve immediately.
