Say Cheers with a Champagne Mojito

My absolute favorite cocktail is a Mojito. I love experimenting and creating different versions of this drink to fit every occasion. This recipe involves a lot of the same flavors as a traditional Mojito, but with the added taste of Champagne.

The Champagne, along with the club soda gives this Mojito an extra bubbly kick. The simple syrup, lime, and mint add those classic fresh and sweet Mojito flavors we know and love. This cocktail would make any simple gathering, or large party, extra special!

This drink is best enjoyed the day it is made - I recommend making it cocktail right before serving. This recipe can easily be doubled, tripled, etc., to make larger quantities.


  • 3 cups Champagne, Chilled
  • 1 cup Club Soda
  • 1/2 cup Simple Syrup (get the recipe here)
  • Juice of 1 Lime
  • Handful of Fresh Mint Leaves
  • Ice, for Serving (Optional)

Place the mint leaves at the bottom of a large pitcher, and using the end of a wooden spoon, crush/muddle the leaves. This will release the juices and flavor of the mint.

Pour the champagne, club soda, simple syrup, and lime, into the pitcher. Stir to combine. Serve immediately over ice (the ice is optional, it just adds an extra chill factor).
