Dessert for Breakfast: Light Chocolate Peanut Butter Oatmeal Cookie Pancakes

Cookies meet pancakes in this Valentine’s Day breakfast! The classic No Bake Cookie gets a makeover making it perfectly acceptable to enjoy cookies in the morning!

I believe special breakfasts are required on holiday mornings! Surprise your loved ones with a breakfast will all the flavors of the delicious peanut butter, chocolate and oatmeal ‘No Bake’ cookie. An oatmeal loaded pancake is filled with chocolate then drizzled with a nutty and irresistible peanut butter sauce. Now who says you can’t have your cake and eat it too?!



  • 1 cup oat flour
  • 1 cup oats
  • 3 teaspoons baking powder
  • 1/2 cup cocoa powder
  • 1/4 cup stevia (or granulated sugar)
  • 2 cups almond milk
  • 1 tablespoon coconut oil
  • 1 tbsp applesauce (or pumpkin puree)
  • 1 tsp vanilla extract

For Pancakes: In a large bowl, whisk together the oat flour, oats, baking powder, cocoa powder and stevia.

In a separate bowl, combine the almond milk, oil, applesauce and vanilla. Stir the oat mixture into the almond milk mixture until just moist, being careful not to overmix

Heat a large nonstick griddle over medium heat. When hot, lightly spray the pan with oil. Scoop out 1/4 cup of batter onto griddle. Cook until the pancakes start to bubble and the edges begin to set, 3-5 minutes. Flip the pancakes over and cook the second side until golden, 1 1/2 minutes. These pancakes take a bit longer to cook than typical pancakes. Repeat with the remaining batter.
