Chunky Apple Cinnamon Bundt Cake with Simple Cinnamon Cream Cheese Icing

I don’t think there is any better time of year than autumn. The leaves are changing, cooler weather is rolling in, and apples are in season! Apple picking is fun for the whole family, and there really is nothing like homemade apple desserts. 


This Chunky Apple Cinnamon Bundt Cake is very delicious on its own, but when topped with my simple Cinnamon Cream Cheese Icing, it's a decadent, yet quick dessert that your whole family will love!

The best part is, this cake is seriously so easy to make, and you can customize with your favorite flavor combinations throughout the year. Its especially good with apples and cinnamon, but the same formula can be used to change out the flavors. Drizzle some caramel on top, or sprinkle on some nutmeg for an extra delicious treat.

With apples in peak season, make sure you whip up this delicious treat for a dessert, or even fall brunch. 

 

Ingredients

For the Cake:

  • 1 box of yellow cake mix
  • 2 small instant vanilla puddings
  • 1/2 cup vegetable oil
  • 1 cup water
  • 4 eggs
  • 1 cup applesauce
  • 1 1/2 cups diced apple
  • 3/4 cup cinnamon baking chips
  • 1 tablespoon cinnamon
  •  

For the Icing:

  • 1 (8 oz) package cream cheese, softened
  • 1/4 cup butter, softened
  • 4 cups powdered sugar
  • 3-4 tablespoons of milk
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla
  • More cinnamon chips, for garnish
Directions

Preheat oven to 350 degrees. Combine cake mix, puddings, oil, water, eggs, applesauce, apples, cinnamon baking chips, and 1 tablespoon cinnamon with electric mixer. Pour into prepared bundt pan. (Be sure to grease or spray with nonstick spray).

Let cake cool on counter for about 10 minutes. Then, invert cake onto serving plate to finish cooling. For the icing: combine the cream cheese, butter, milk, 1 tablesoon cinnamon, and powdered sugar in a mixing bowl. Blend until fluffy.

Once cake is cooled, top with icing and sprinkle with more cinnamon chips. Enjoy!
