Cranberry Salsa

This salsa is a fun twist on traditional flavors.  It get’s better the longer it rests, so is a great make ahead side. Try it as a zesty relish too!


Ingredients
  • 1 1/2 Cup chopped frozen cranberries
  • 1/3 Cup sugar
  • 1/4 Cup thinly sliced green onion
  • 1/4 Cup chopped cilantro
  • grated zest & juice of 1 line
  • 1 jalapeno pepper finely chopped (more if needed)
  • 2 teaspoon fresh ginger grated
Directions

Toss all above ingredients in a bowl and mix.  Best if left to sit for a couple hours.

Serve with blue tortilla chips
