Creamy Spinach Ravioli Bites

These creamy spinach ravioli bites are a sure crowd pleaser. They’re light and refreshing, yet bold and satisfying.

It’s hard to eat just one…and the more you eat, the more vitamins, minerals, and protein you’re getting. The perfect treat to keep your guests light on their feet!

An irresistable blend of herbs and the season's tasties vegetables make for a hearty and healthy combination that is the perfect started to your dinner menu. This recipe is vegan-friendly so guests with all diet restrictions can dig in without worry!



  • 1 cup of cashews (soaked for 1 hour, and drained)
  • Juice of 2 lemons
  • 1 teaspoon of salt
  • Splash of apple cider vinegar
  • 8-12 scallions chopped (green part only)
  • 2 tablespoon (packed) of chopped parsley
  • 3-4 tablespoon of chopped spinach
  • 1 squash

Combine cashews, lemon juice, salt, and apple cider vinegar into food processor. Pulse till smooth. Stir in scallions, parsley, and spinach.

Thinly slice squash into circles (bonus: use a mandolin!).

Put in 1/2 -1 tablespoon of filling into squash, and fold in half!

Makes: about 15 ravioli bites
