Creative Kids Lunch: Turkey Sushi Sandwich

Creating a unique lunch for your kids is often a daunting task - you feel like its hard to get away from the normal turkey sandwich or typical peanut butter and jelly! Turn any sandwich into an exotic meal with this simple trick.


Sometimes all you need is a little extra touch to make that lunch just a bit more special. Thats why I rolled this turkey sandwich into sushi. (No, there isn't going to be raw fish in your kids turkey sandwich! Its simply created to look like a sushi roll).

The key to this recipe is making sure your bread is soft. If it isn't soft, it wont roll correctly. Just place the cheese and turkey in the middle of a slice, roll it up, cut it into bite-sized pieces, and put it in a container, making sure you place the cut side down (so it looks like a real sushi roll).

Once your kid opens the container, he or she will be so excited to take a bite of sushi. Its not only fun, but easier to eat too!

Ingredients
  • 2 pieces of soft White or Wheat Bread, crusts cut off
  • 1 slice of cheddar cheese
  • 2 thick slices of deli turkey
  • Mustard
Directions

Cut the piece of cheese into long strips. Roll the deli turkey into long roll-ups. Smear a thin layer of mustard on each piece of bread.

Place half of the cheese on top of the bread, vertically near the side, and then place the turkey roll on top. Carefully roll up the sushi, starting with the end where the cheese and turkey is.

Press the end of the roll to glue it to the bread. Cut each roll into 4 pieces.

Note: This sushi can be made ahead of time; however, it is best enjoyed within 24 hours of preparation.

Makes 1 roll (about 8 pieces)
