Cucumber and Herb Cheese Roll-Ups

If you’re hosting a casual wine-tasting party, it’s important to have light snacks on hand for your guests - and it’s even more important that those snacks pair well with the wines that you’re serving.


 And these simple summer nibbles are the perfect little finger food to compliment a light white wine - especially an Australian one.

Fresh and crunchy cucumber is a lightly fragrant vegetable that pairs well with all whites, and adding a bit of herb-accented cream cheese to this refreshing vegetable will turn it into a sophisticated snack. Not only is this dish easy to prepare (you probably need 10 minutes tops), it can rest in your refrigerator for up to 24 hours before the party. That means you get more time to focus on party planning, so that you can get every other detail exactly right!

 

Ingredients
  • 2 large English cucumbers
  • Pinch of salt and pepper
  • 2 cups of soft cream cheese
  • 1 cup of mixed fresh herbs
Directions

In a large mixing bowl, combine the soft cream cheese, salt and pepper, and chopped fresh herbs. (I used oregano and basil, but any herb combination of your choice will work.) Gently beat the ingredients together with a hand blender until the mixture is smooth and creamy.

Next, slice the cucumbers lengthwise. You’ll want to make each slice thin enough so that you can roll it without breaking it, but not so thin that it falls apart. (If you have a mandolin slicer, that will work great, but a nice sharp knife should do the trick, too.)

To complete the dish, add a layer of cream cheese to the top of each cucumber slice and roll together. Complete the process until all your cucumbers are rolled. If storing overnight, cover the rolls with a plastic wrap and stash them in your refrigerator until you are ready to serve them.

Note: If time is an issue, you can use pre-made herb-accented cream cheese to make preparation even easier.
