Easy and Simple Mini Cherry Pie

Have you ever heard the saying "good things come in small packages"? Whenever we want to add a sweet ending to a dinner party, or want to give a friend or neighbor something to smile about, we turn to this easy mini cherry pie recipe.


While they aren't very large in size, they're one of the sweetest, not to mention easiest, ways we know to get someone to smile. They might not be able to mimic the lattice work here, but this pie recipe itself is easy enough for even the littlest of bakers to make.

If you have ground cinnamon and vanilla extract in your pantry adding a 1/4 teaspoon of each will add a dash of extra flavor to your pie.

Ingredients:

1 roll of ready made pie pastry

1 cup of white granulated sugar

2 cups of pitted fresh cherries

Directions:

In a glass mixing bowl, add the cherries and 3/4 cup of sugar and mix until the cherries are fully coated (if you are adding other spices, do so now). Allow the mixture to stand for 15 minutes to give the ingredients time to blend together. Adding a dash of water to this mix will also accelerate the maceration process.

Meanwhile, pre-heat your oven to 350F and ready your mini pie pans. If you don't have mini pie pans, try using a cupcake pan - your pies will be extra mini, but there's nothing wrong with that!

Layer your mini pie pans with a piece of pie crust just like you would a larger dish.

After 15 minutes, add the cherry mixture to your mini-pie dishes and fill them almost to the top. Top with your ready made pie pastry, we used a lattice design, and then top that with the remaining sugar to ensure that you are left with a golden brown pie crust. If you have an egg, you can whisk it and brush it onto the tops, then sprinkle the sugar. Melted butter will work, too!

Place your pies into the oven and bake at 350F for 20 minutes or until golden brown.

Helpful Pie Hints

Cherry pie is great on its own, but even better served with fresh vanilla ice cream, so if you have it, be generous with it!

Mini pies make for great gifts. We topped ours with these "Sweet Tweet" treat toppers for an added dose of sweetness. Do the same with yours, then wrap in cellophane and gift!
