Ingredients:

2 cups whole walnut halves

2 cups whole pecan halves

2 cups whole unsalted cashews

1 cup whole unsalted peanuts

1/3 cup good quality maple syrup

1/4 cup brown sugar

Juice and zest from one orange

3 tablespoons dried rosemary

2 teaspoons chili powder

1 teaspoon salt

Directions:

Preheat oven to 325°F. Grease a large baking sheet with vegetable oil and set aside.

In a medium bowl combine all nuts. In a separate bowl stir together maple syrup, brown sugar, orange juice and zest, and chili powder. Once mixture is well combined pour over nuts and toss until well coated. Sprinkle 2 tablespoons of rosemary onto nuts and continue tossing until spices are well dispersed.

Spread nut mixture in a single layer over prepared baking sheet. Roast nuts in oven for about 25 minutes, mixing every so often with a spatula to keep them from burning. Once nuts are golden brown, remove from oven allow to cool for about 10 to 15 minutes. When nuts have reached room temperature toss them in a bowl with salt and remaining tablespoon of rosemary. Serve immediately or store in an airtight container for up to 3 weeks.
