Easy Peanut Chicken Stir Fry

Mix up some delicious stir-fry peanut chicken that tastes fantastic and can come together in a mere 10 minutes.


I was working with what I had on hand, but this recent experience really makes me want to dig deeper into real Chinese cuisine.

If, like me, you're guaranteed to have milk, peanut butter and soy sauce packets lying around at all times, this meal is a great go-to for last-minute weeknight dinners. 

Ingredients:

2 chicken cutlets, cut into 1-inch pieces

1 heaping tablespoon of peanut butter

2 tablespoons milk

2 tablespoons less sodium soy sauce

1 teaspoon hot sauce

pepper to taste

garlic powder to taste

1 teaspoon olive oil + 1 teaspoon for cooking

1/2 red bell pepper, sliced (optional) 

Directions:

Prep your chicken - trim and cut - then place into a glass bowl.

Add in your other ingredients. Toss and make sure each piece is coated thoroughly with the marinade. Allow to rest for a few minutes.

Meanwhile, chop your pepper. Broccoli, onion or even string beans would pair well with this dish, too.

Once your veggie is ready and your meat has been able to rest a few minutes, prepare your wok by adding in a teaspoon of olive oil. You won't need any more than this as the peanut marinade will aid in the cooking process. You'll know your wok is ready if the oil rolls around the bottom evenly and effortlessly.

Add in your chicken and veggies all at once - but be careful! The wok will be hot and the meat will begin cooking instantly. Stir continuously with a plastic spoon or tongs, but allow the sides of the meat to sear a bit to get a nice crunch.

Meat should be completely cooked within 8 - 10 minutes.

Serve over some noodles or homemade fried rice.
