Easy Red, White, and Blue Ice Cream Sandwich Pops

Whenever I’m throwing a party, I always like to have at least one super easy treat to serve to my guests. I truly believe that dessert doesn’t need to be overly complicated. And when I created these Ice Cream Sandwich Pops, I knew they were genius! They couldn’t be simpler, and everyone loves them. It’s your favorite classic ice cream dessert on a stick, coated in sprinkles—how can it get much better?


To make these ice cream sandwich pops, which are perfect for the 4th of July, I used mini ice cream sandwiches. These store-bought treats make the process even easier, and let’s face it, everything is cuter when it’s mini! To up that "cuteness factor" even more, you can also play around with different types of sprinkles or experiment by using mini candies, like M&Ms or different types of mini chocolate chips!

Ingredients:

Mini Ice Cream Sandwiches*

Red and Blue Sprinkles

Lollipop Sticks

*If you can’t find mini ice cream sandwiches, you can always buy normal sized ice cream sandwiches and cut them in half horizontally.

Directions:

Stick a lollipop stick into the bottom of each sandwich.

Coat one side of the sandwich (the end where the ice cream is showing) with red sprinkles and the other side with blue sprinkles. Feel free to play around the sprinkles and use both colors on one side or anything you want to do.

Serve and eat immediately! If you leave them out for too long, they will melt. (You can assemble these ahead of time, but be sure to place them in the freezer until you are ready to serve them.)
