Fall Favorite: Spicy Dark 'n' Stormy Cocktail

Set the tone for your dinner party with this this cocktail that will warm you up and get everyone in the mood for a night of feasting and relaxing. Plan ahead and give yourself a few days for the rum infusion, but the cocktail itself is a quick assembly and lends itself to varying proportions, based on your tastes.

Dark ‘n Stormys are one of my favorite cocktails because I love ginger beer. Since it is fall, I thought we should kick up the traditional cocktail with spices that are indicative of the season. If you love ginger and spice, you will love this cocktail. Side note: If you have leftover spices after infusing the rum, use the rest to make mulled wine! It would be a great way to end the night.

I went with the traditional rum of choice for a Dark ‘n' Stormy, Gosling’s, and added all spice berries, vanilla bean, cinnamon, cardamom, star anise, cloves and even an orange peel. After a few days, I strained the spices out of the drink with a cheese cloth, and combined it with ginger beer and lime. The drink is so deliciously fragrant! Topped with a lime wedge, it not only tastes delicious for the season, but looks festive and fall-ready.

Ingredients
  • 2 ounces infused rum (recipe below)
  • 6 ounces ginger beer
  • 1 lime wedge
  •
  • To Infuse the Rum
  • 750 ml rum
  • 3 All spice berries
  • 3 Cloves
  • 1 Cardamom pod
  • 1 Vanilla bean
  • 1 Cinnamon stick
  • 1 Orange peel (3-4 inches long)

Directions

To infuse the rum:

Pour the rum into a large jar and add the all spice berries, cloves, cardamom pod, vanilla bean, cinnamon stick, and orange peel.

Cover and shake and then place in a dark place for 2 days, shaking occasionally. Strain mixture.

To make the cocktail:

Fill a glass with ice, and pour the rum over the ice.

Top with ginger beer and add the lime.
