When Life Hands You Lemons, Make Frozen Lemon Sparklers

I am SO ready for summer. Even though the warm weather has been a long time coming here in Missouri, I brought a little sunshine into my life by making these Frozen Lemon Sparklers. Bring on the heat!

After college, I moved to Jacksonville, Fla. to live with my cousin. What was supposed to be a summer turned into four years! My favorite little beach-side hideaway was called The Lemon Bar, known for their delicious drink, the Lemon Bar Freeze. It was so refreshing, especially with the ocean just feet away. I have wanted to recreate that feeling for a while, and I think I've finally come close with this recipe. These Frozen Lemon Sparklers aren't exactly the same, but they are pretty darn close.

The secret ingredient to these summer beauties is vanilla Greek yogurt. It creates a delicious, creamy, and fresh combination that I can't quite put into words. All I know is, I may have found a new favorite cocktail! I may not be able to make it to the beach this summer, but this cocktail would be just as perfect poolside. I can’t wait to make this for trips to the pool, outdoor parties and socializing with friends.

At home in Missouri, I miss the beach. These Frozen Lemon Sparklers bring me a little taste of my time in Florida, and makes me miss my friends in Jacksonville even more than I do on a normal day. Cheers to summer!

  • 1 can frozen lemonade concentrate
  • 3 tablespoons (about 2 shots) vodka (I love Tito’s!)
  • 1 cup water (use the can from the concentrate)
  • 1 cup vanilla greek yogurt
  • 1 tsp. vanilla extract
  • Lemon wheels, for garnish (optional)
  • Sugar, to rim glass (optional)
  • Ice, ice, ice! (Start with about a handful and keep adding as necessary).

Add all of the ingredients into a blender and fill with ice. Blend on high/ice crush until smooth. Add more ice if needed.

Rim a glass or mason jar with sugar. Pour slushee mix into glass. Garnish with a lemon wheel (optional).

Makes: 3-4 sparklers
