Garlic Lemon Green Beans with Kale

Green Beans have always been a favorite side of mine. Whether it’s either Thanksgiving dinner or just a normal Monday night, I love making green beans in all sorts of dishes. Green beans are very easy to impart tons of flavors.


By adding just a couple simple ingredients, such as garlic and some lemon, green beans can be transformed into an amazing dish.

Those very ingredients are what I used to make these Garlicky Lemon Green Beans with Kale. I sautéed the green beans in tons of garlic and then once they cooked down and were soft, I added lemon juice and large handful of baby kale. Baby kale is a super healthy green that brings a peppery flavor to the dish. It melds perfect with the acidic lemon and fragrant garlic.

Not only is this green bean dish super flavorful, but also it is very simple. It takes just minutes to make on the stove and can be made in advanced if needed.

Ingredients
  • 2 tablespoons Olive Oil
  • 3 Cloves of Garlic, Minced
  • 2 pounds Fresh Green Beans, Cleaned and the stems trimmed off
  • Juice from 1 small Lemon
  • Large Handful of Baby Kale
  • Salt and Pepper, to Taste
Directions

Place a large sauté pan over medium heat. Heat the olive oil in the pan and then add the minced garlic. Sauté the garlic until it turns a light-golden brown.

Add the green beans and sauté until they have softened.

Once the green beans have become soft and have slightly cooked down, add the lemon juice and kale.Toss the kale with the green beans until they have wilted and cooked down.

Add the salt and pepper to the kale and green beans.

Transfer the mixture to a serving dish and serve immediately.

Note: These green last up to 4 days in a sealed container. To re-heat, place the green beans and kale in a microwavable dish and microwave for 90 seconds.
