Glamorous Chocolate Truffle Cupcake Recipe

For your girls night out, this cupcake recipe is sure to please if your friends love chocolate. It combines a rich chocolate cake (theres actually a chocolate truffle baked into each one!) with a creamy chocolate ganache frosting to create the ultimate chocoholics dream.


And the best part is, you can serve them in simple wrappers, or use our tips to dress them up with ribbons, buckles, gems and jewels (like you see in the photo below).

Ingredients:

Cake

1 3/4 cup flour

2 cups sugar

3/4 cups cocoa

2 teaspoons baking soda

1 teaspoon baking powder

1 teaspoon salt

1 cup buttermilk

1/2 cup vegetable oil

2 eggs

1 cup strong hot black coffee

1 teaspoon vanilla

24 chocolate truffle candies (more if you wish to top each cupcake with a truffle)

Ganache Frosting

16 ounces finely chopped bittersweet or semi-sweet chocolate

2 cups heavy whipping cream

1/4 teaspoon salt

Directions:

For the cake, mix all cake ingredients, with the exception of the truffles, in an electric mixer for 4 minutes.

Fill cupcake liners 2/3 full with batter. Place unwrapped chocolate truffle into the center of each cupcake before baking. Bake at 350 degrees for 20 minutes.

For the frosting, place finely chopped chocolate in a bowl. Heat heavy whipping cream in a saucepan over medium heat until cream begins to bubble.

Pour hot cream over chopped chocolate and let sit for five minutes, then stir until combined. Let cool on the counter for an hour or in the refrigerator for 20 minutes.

Beat with an electric mixer with the whisk attachment for 5 minutes. Use a pastry bag with tip to pipe onto cupcakes.

Optional: Top each cupcake with another chocolate truffle!
