Gluten-Free Sweet Potato Souffle Recipe

Impress your guests with a rich and irresistible sweet potato souffle! They'll be even more impressed when you tell them this treat is gluten-free!

Make this in a large pan or spoon into individual baking dishes for presentation.

  • For the souffle
  • 3 large cooked sweet potatoes, pureed
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup melted butter
  • 1/3 cup milk
  • For the topping
  • 1 cup light brown sugar
  • 1 cup chopped pecans
  • 1/3 cup butter softened

Mix all potato casserole ingredients together in processor and process until well blended.

Mix together topping ingredients in bowl until crumbly.

Put potato mixture in greased baking dish and sprinkle sugar/pecan mixture over the top.

Bake at 350 for 25 minutes.
