Graduation Cap Cookies

If you want to make a festive graduation dessert that offers your special grad a little something more, then these cookie graduation caps are just the ticket!

When it comes to graduation desserts the classic sheet cake with a snapshot of the grad frosted on top is all well and good, but I like to think that this celebration deserves a little something special.

Mini graduation caps made out of chocolate chip cookie cups, chocolate squares, M&Ms, and Sour Candy Belts are the ideal graduation treat. For one thing, the only baking involved in this dessert is the cookie cups, and they couldn't be easier or more quick to bake up. After that, it's just a matter of assembly!


1 cup All Purpose Flour

1/4 teaspoon Baking Soda

1/4 teaspoon Salt

1/2 cup Brown Sugar

1/4 cup Sugar

6 tablespoons Unsalted Butter, Melted and Slightly Cooled to Warm

1 Egg

1 teaspoon Pure Vanilla Extract

1 cup Mini Chocolate Chips

Ghirardelli Chocolate Squares, or any other Chocolate Sqaure


Sour Candy Belts, cut into 1 1/2-inch thin stripes

Decoration Icing, to use as “glue”


To make the cookie cups, preheat the oven to 325 degrees F. Grease a mini cupcake pan with oil or butter. Set aside until ready to use.

In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

In the bowl of a stand mixer, beat together the brown sugar, sugar, and melted butter until smooth. Add the egg, egg yolk, and vanilla; beat until fully combined.  Add the flour mixture and mix until it’s just incorporated. Stir in the chocolate chips.

Using a spoon, scoop the cookie dough into each cup, filling 3/4 of the way up.

Bake the cookie cups until they have set and start to a turn a light golden brown, about 10 minutes. Be sure not to over-bake the cookies, you would rather have them be a little underdone than overdone. Remove the cookies from the oven and immediately transfer to a cooling rack. Cool until the cookies are room temperature. 

Once the cookies have cooled, turn the cookie cups upside down. Place a dab of the decoration icing on top of each cookie and then stick the Ghirardelli Chocolate square on top. Place a dot of icing in the middle of the chocolate square. Stick 2 candy belt strips on top of the icing and then place another dot of icing on top and stick 1 M&M on top. Continue with the rest of the cookie cups.

These last up to 3 days in a sealed container.
