Ginger Crunch Cookie Recipe + How to Make a Cute Graduation Cookie Display

For this year's graduation party, show your spirit by displaying your school's colors one final time! 


As a tribute to the place where you've created unforgettable memories the past few years, let yourself (and the graduate!) get creative by incorporating your alma mater's colors into a simple cookie tray!

 

 

Group store-bought pirouette cookies in a ribbon serve as a nod to graduation scrolls, and add sprinkles on top of chocolate-dipped cookies for a festive pop of color. To make something more personalized and homemade, Gingery Crunch Cookies are a simple and delicious snack guests can enjoy without feeling overly full.

 

 

Ingredients
  • 1/2 cup (1 stick) softened butter
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1/4 cup molasses
  • 1/3 cup light corn syrup
  • 2 1/4 cups sifted flour
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon fresh ground nutmeg
  • Powered sugar for dusting.
Directions

Heat oven to 350 degrees F. Using a mixer on medium speed, beat butter and sugar together until creamy. Slowly add molasses and corn syrup until well-combined.

Add in remaining ingredients and mix until smooth, then chill for 30 minutes.

Thinly roll dough out on lightly floured surface to about 1/8-inch thick. Cut with cookie cutters of desired shape.

Bake on lined parchment lined cookie sheet for approximately 8 minutes.

After cookies are cool, lightly dust with powered sugar.

Makes: 6 dozen cookies
