Stuffed Salami Diplomas: Delicious Graduation Party Snack

To stay in the celebratory theme of graduation for your grad party, it’s always fun to create food and desserts that are based around the graduation ceremony and its iconic symbols. 


Desserts are often easier to create in the form of diplomas, graduation caps, or something numerical to represent the graduating year. But the appetizers and snacks aren’t so easy. With this, I racked my brain to think of a delicious and easy snack to represent gaduation. I came up with Stuffed Salami Diplomas.

 

 

To make the Stuffed Salami Diplomas, all you do is place spreadable cheese and either a sun dried tomato or roasted red bell pepper on one piece of salami. Roll the Stuffed Salami up to create a log that resembles a Graduation Diploma.

Wrap the Salami in a long string of celery, and then serve and enjoy! With just a couple simple and quick steps, you have a completely edible appetizer or snack for your special Graduation Party.

Note: The serving size depends on how many diplomas you would like to make. The more ingredients you purchase, the more diplomas you’ll make. Because of this, there are no quantities on the ingredients list below.

 

Ingredients
  • Salami rounds (the larger, the better)
  • Spreadable cheese. I used Laughing Cow cheese (any flavor works)
  • Sun dried tomatoes, cut into thin small pieces
  • Roasted red bell peppers, cut into thin small pieces
  • Stalk of celery
Directions

Lay out the salami rounds on a clean surface. Spread a small smear of the spreadable cheese on one side of each salami round. Place a small piece of either a sun dried tomato or roasted red bell pepper in the middle of each piece of salami. Carefully roll up each piece of salami into a log (to look like a Diploma). Place the Salami Diplomas seam side down.

Using a small sharp knife cut very thin strands of the celery to create long string-like pieces. Be sure the pieces are thin because if they are too thick they will not tie around the diplomas. Wrap the diplomas with the celery and tie a loose, but tight enough so it keeps the salami rounds rolled up, knot around the salami rounds. Place the Salami Diplomas on a serving platter and serve immediately.

These can be assembled ahead of time, just be sure to store them in the refrigerator until ready to serve.
