Gorgeous Grapefruit Bellinis

Mimosas are a staple for any brunch, and everybody loves the classic orange juice and champagne combo. For a fun twist on the citrus cocktail, try a grapefruit bellini instead. 

Swap the orange juice for fresh-squeezed grapefruit juice, and the champagne for prosecco. The bright color from the grapefruit juice adds a pretty hue to your Easter table, and will be a nice surprise for your guests instead of a traditional mimosa. For this recipe, I included a little bit of ginger liqueur to complement the tart citrus flavor. 

To garnish, use fresh fruit. Cut up orange wedges, grapefruit wedges and leave whole strawberries with a cut in the berries to easily garnish your flute. For another nice serving touch, I used this chalkboard wine carafe from 1800Flowers.com. It's a great way to label your signature drink so everyone knows what they are pouring!



  • Prosecco
  • Fresh-squeezed grapefruit juice
  • Ginger liqueur
  • Fresh orange or grapefruit slices, for garnish

Pour about 3 ounces of grapefruit juice and 1 ounce of ginger liqueur into a champagne flute. Top with prosecco, garnish and serve.

To make a carafe-sized batch of bellinis: Pour 16 ounces of grapefruit juice, 4 tablespoons of ginger liqueur and one 750-ml bottle of chilled prosecco into a carafe. Stir, and serve.
